TK-10899: serve the PJ mailer images at ?quality=100

Shopify Files re-encodes every upload at quality=85. Measured against the originals that
is PSNR 30.1-35.5 dB, worst on pj-coco-weave (a woven texture - the high-frequency detail
this line is actually selling). ?quality=100 returns the pixel-exact original bytes
(PSNR 99), which restores the lossless 1:1 substitution the swap claimed.

Rewrites the 5 live src values, keeps the restore map in sync so --rollback still matches,
and patches the tool so a future run is correct by construction.
