docs(cli): tighten README and drop stale catalog counts (#659)

Removes the deprecated Library-plugin install block and the Emboss slash-command path, adds /printing-press-reprint to the worked examples, and replaces hard-coded "24 CLIs / 17 categories / 17 MCP" counts (and the inaccurate catalog API list) with stable phrasing so the README stops drifting as the library grows.
