Deleted 7 stale backup/temp/old/dpkg-dist configs from sites-available
that were leaking internal infrastructure details (Shopify sandbox domain,
internal port assignments) in git history. Updated .gitignore to prevent
future *.backup *.old *.save *.temp *.dpkg-dist etc. from being tracked.

Captures the clean state after 2 cleanup rounds today:
  1. removed stale .bak duplicates from sites-enabled/ (silenced 8+
     conflicting server name warnings on every nginx reload)
  2. normalized 15 regular files in sites-enabled/ into symlinks back
     to sites-available/

Backups for both cleanup rounds preserved on prod at:
  /root/nginx-backups/cleanup-2026-05-21/
  /root/nginx-backups/normalize-2026-05-21/

nginx -t is clean. sites-enabled/ is now 100% symlinks (202).
